October 4 / Whole 30 Day 4 Breakfast: PaleOMG Crockpot Breakfast Pie

Oh dear. This didn’t turn out as expected. At all.

There’s this awesome website called Pinstrosity where people show their terrible results at trying to make something they saw on Pinterest. When I was getting this dish out of the crockpot this morning, I immediately thought this would be a great submission for that site.

What a giant mess.

This was a recipe by PaleOMG. Usually I have great luck with her concoctions, which is why I’m kind of at a loss for words. I did make a few modifications to her recipe, so that may be where things went awry. The big difference is that I used chorizo instead of ground pork because that’s what I had on hand. I also didn’t add any additional veggies to the pot because I didn’t have any other than more onions.

Would chorizo + no additional veggies be the cause of this clusterfuck of a dish? I’m pretty sure I cooked it for long enough (…perhaps it’s the shape of my crockpot…the newer models are longer and oval-shaped, where mine is the older-school round one, meaning that more of the mixture was vertical than horizontal.

At any rate, I thought it’d be a good idea - prior to knowing that it hadn’t sufficiently set/solidified - to quickly turn the pot upside-down over a cutting board. What. A. Mess.

OK, now the good: it tastes great! It tastes more like a holiday meal side than a breakfast, but I am okay with that. The recipe says it makes 4-6 servings…I’d definitely say it is six unless you are really hungry. That being said, once I finished my 1/6 portion, I briefly contemplated going back to the fridge to get another one because it was definitely tasty. But I decided not to be a little piggy and left for work.
